Cretan Brain Food Salad

Ingredients:
- 1 can Smoked Oysters, in oil
- 2 oz Fresh Mozzarella, cubed
- Salted Cashews, about a dozen
- 1 Medium Tomato, cubed
- 1 Tbsp Rice Wine Vinegar
- 1 Tsp lemon juice, fresh is best
- Salt & Pepper to taste

Optional, sprinkle of feta as garnish
Instructions:
Pour the rice wine vinegar and lemon juice into a bowl. Add the cubed tomatoes and mozzarella, add some fresh cracked black pepper. Drain the oil from the oysters and add them into the bowl. You can add a little of the oil for more flavor. Add the cashews. Toss well and taste. Optionally add a garnish of feta crumbles. Salt & pepper to taste.
This salad is brain food. Its high in all the good stuff and low in all the bad stuff, it will make you a super hero. Use wisely.
