Ingredients: 
  • 1 can Smoked Oysters, in oil
  • 2 oz Fresh Mozzarella, cubed
  • Salted Cashews, about a dozen
  • 1 Medium Tomato, cubed
  • 1 Tbsp Rice Wine Vinegar
  • 1 Tsp lemon juice, fresh is best
  • Salt & Pepper to taste
  • Optional, sprinkle of feta as garnish
     
Instructions: 

Pour the rice wine vinegar and lemon juice into a bowl. Add the cubed tomatoes and mozzarella, add some fresh cracked black pepper. Drain the oil from the oysters and add them into the bowl. You can add a little of the oil for more flavor. Add the cashews. Toss well and taste. Optionally add a garnish of feta crumbles. Salt & pepper to taste.

This salad is brain food. Its high in all the good stuff and low in all the bad stuff, it will make you a super hero. Use wisely.
